PRIME MEATS
PRIME is the highest quality produced in the U.S.A. The designation of PRIME is only given to the finest beef. PRIME beef is hallmarked by perfect, even marbling. Marbling is a term used to describe the small flecks of fat embedded inside the meat. This marbling disappears when cooked but adds taste, tenderness and juiciness without adding cholesterol. Roughly, THREE percent of meat achieves the PRIME label. Very little PRIME beef makes it past the best hotels or restaurants. As a prestige butcher, you will find it here. Beef is very nutritious and a good source of energy. It is rich in protein, vitamin B and iron. The beef you find in nearly all supermarkets is a lower grade "Choice" or "Select".
